Spirit measures and the law

Bromley Trading Standards explains that gin, rum, vodka and whisky sold by the glass must be served in 25 ml or 35 ml, or multiples, and a notice must tell customers which quantity is used. This does not apply when the spirit is served as a cocktail mixed with two or more other drinks.

All equipment used to measure alcohol must be government stamped. Optics and other spirit measuring instruments carry a crown stamp, while newer thimble measures may be CE or UKCA marked. Bottle-top pourers must not be used on their own to determine the measure. Speed pourers help with flow, but the measure must come from a stamped jigger or optic.

  • Choose 25 ml or 35 ml and display a notice
  • Use stamped thimbles or optics
  • Do not free pour measured spirits

Mandatory licence conditions on measures

Under the mandatory conditions for licensed premises, beer or cider must be available in a half pint, gin, rum, vodka or whisky in 25 ml or 35 ml, and still wine in a 125 ml glass. These measures must be shown on a menu, price list or other printed material, and customers made aware of them.

Every premises must also have an age verification policy, with photo ID bearing a holographic mark or ultraviolet feature for anyone who appears under 18. Staff must not run irresponsible drinks promotions.

Ice, hygiene and starting up

If you serve food, you must register with your local council at least 28 days before trading. Registration is free and cannot be refused. GOV.UK says surfaces and equipment that touch food should be easy to clean and disinfected, and you must be able to show staff are adequately trained in food hygiene.

Use a dedicated ice scoop rather than scooping with a glass, and keep ice buckets and scoops on a cleaning schedule.

How much should I pay for bar equipment: optics, ice, cocktail kit?

Most of the 142 UK listings we screened sit between £10 and £40, with a middle price of £18. Trade suppliers often show prices before VAT, so add 20% if you can't reclaim it.

A VAT-registered business can usually reclaim the VAT on equipment bought for business use, as long as it holds a valid VAT invoice from the supplier. Ask the seller for one at checkout.

Where can I buy bar equipment: optics, ice, cocktail kit for a business?

The picks here come from Drinkstuff.com. Most UK trade suppliers offer next-day delivery and VAT invoices; some offer credit accounts for regular orders.

Can bar staff free pour spirits?

Not for gin, rum, vodka or whisky sold by measure. Trading Standards say bottle-top pourers must not be used on their own to determine measures, so use a stamped jigger or optic.

Do jiggers need to be stamped?

Yes, if they are used to measure spirits sold. Newer thimble measures may carry a CE or UKCA mark instead of a crown stamp.

Should my bar use 25 ml or 35 ml measures?

Either is legal for gin, rum, vodka and whisky, but you must display a notice saying which you use.

Do cocktails have to use 25 ml or 35 ml measures?

The quantity rules do not apply when the spirit is mixed with two or more other drinks in a cocktail.
